And yes they actually come out of the papers easily without leaving half your cake stuck in the wrapper! My SIL came and stayed on the weekend and left 5 large over ripe bananas behind, so time to make cake! I only needed 2 per batch but Harry ate the other one…yes he eats them bruises and all yuck!

These cupcakes (muffins) are made using the exact same recipe. It really is one of those recipes that seem too good to be true, but turn out so delicious and EASY! I had to make two batches in two days. The first ones we took to a family potluck dinner, the kids were not impressed they all got eaten!
The recipe makes 12 good sized cupcakes (muffins). With the second batch I made them slightly smaller and had enough mixture left to also make 12 little mini cakes. Great for the kids lunch boxes.
I am not an icing fan…well except cream cheese icing I love that stuff! But I didn’t have any cream cheese on hand this time so chocolate dots it is.
My kids love white chocolate and this is my new favourite way to decorate cupcakes! No need to add another whole layer of sugary icing, and the kids were over the moon that their cupcakes had white chocolate on. They always feel a ripped off if I just dust with icing sugar lol!
All I did was put the chocolate drops on top as soon as the cakes came out of the oven and were still piping hot. After a minute or two I pushed them down lightly so they would be stuck when they cooled and set. That simple!! No messy piping bags, no dirty sticky bowls to wash out and it looks simple but cute I think.
Bake time is 12 – 15 minutes for the larger muffins, and 8 – 10 minutes for the minis (or until they spring back when pressed lightly!).
Now if only Harry wouldn’t eat all the bananas I could make these more often!
